Ham & Bacon Cheesy Potatoes

4 large russet potatoes, peeled and diced

1 cup cooked ham, diced

6 slices of bacon, cooked and crumbled

2 cups shredded sharp cheddar cheese

1 cup sour cream

1/2 cup cream cheese, softened

1/4 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup breadcrumbs (optional, for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Boil Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and cook for about 10-12 minutes, or until tender. Drain and set aside.

      Mix the Cheesy Filling: In a large mixing bowl, combine the sour cream, cream cheese, garlic powder, onion powder, salt, and pepper. Mix until smooth.

        Combine Ingredients: Fold in the cooked ham, crumbled bacon, and half of the cheddar cheese into the creamy mixture. Add the cooked potatoes gently, ensuring they are well-coated.

          Transfer to Baking Dish: Pour the potato mixture into a greased 9x13-inch baking dish, spreading it evenly.

            Add Topping: Sprinkle the remaining cheddar cheese on top and, if desired, the breadcrumbs for an extra crispy top.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until bubbly and golden brown on top.

                Garnish: Once done, remove from the oven and let it cool for a few minutes. Sprinkle with chopped green onions before serving.
