Ground Turkey Sweet Potato Skillet – Quick, Healthy, and Delicious

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 red bell pepper, diced

1 small onion, diced

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp cumin

1/2 tsp chili powder (optional)

Salt and pepper to taste

2 cups spinach (fresh or frozen)

2 tbsp olive oil

1/4 cup chicken broth (or vegetable broth)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Vegetables: Start by peeling and dicing the sweet potatoes into small cubes, and chop the bell pepper and onion. Mince the garlic and set all ingredients aside.

    Cook the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with salt and pepper. Sauté for about 8-10 minutes, stirring occasionally, until the sweet potatoes are tender and slightly crispy. Remove them from the skillet and set aside.

      Sauté the Aromatics: In the same skillet, add the remaining tablespoon of olive oil. Once hot, add the diced onion and bell pepper, sautéing for about 3-4 minutes until softened. Then, add the minced garlic and cook for another minute until fragrant.

        Brown the Turkey: Push the vegetables to the side of the skillet and add the ground turkey in the center. Break it up with a spatula and cook until browned and fully cooked through, about 6-7 minutes. Season with smoked paprika, cumin, chili powder (if using), salt, and pepper, mixing everything together.

          Combine Ingredients: Add the cooked sweet potatoes back into the skillet along with chicken broth and spinach. Stir to combine and cook for an additional 2-3 minutes until the spinach has wilted and everything is heated through.
