Ground Turkey Sweet Potato Skillet

1 lb ground turkey

2 medium sweet potatoes, diced

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil

1 cup spinach, roughly chopped

1 tablespoon apple cider vinegar

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the Oil: In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and sauté until translucent, about 3-4 minutes.

    Cook the Turkey: Add the ground turkey to the skillet. Break it apart with a spatula and cook until browned, around 5-7 minutes.

      Add Garlic & Spices: Stir in the garlic, smoked paprika, ground cumin, chili powder, salt, and pepper. Cook for another minute to allow the spices to bloom.

        Incorporate Sweet Potatoes: Add the diced sweet potatoes to the skillet and stir well to combine. Cook for about 10 minutes, stirring occasionally, until the sweet potatoes are tender.

          Add Bell Pepper & Spinach: Mix in the diced bell pepper and chopped spinach. Continue cooking for another 3-4 minutes until the bell pepper is slightly softened and the spinach has wilted.

            Finish with Apple Cider Vinegar: Drizzle the apple cider vinegar over the mixture and stir well. This adds a nice tang to balance the sweetness of the potatoes.

              Serve: Remove from heat, garnish with fresh parsley, and serve hot.
