Ground Turkey Sweet Potato Casserole

Ingredients
  

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 cup onion, chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 cup corn kernels (fresh or frozen)

1 can (15 oz) black beans, rinsed and drained

1 tsp cumin

1 tsp smoked paprika

1/2 tsp chili powder

Salt and pepper to taste

1 cup shredded cheese (cheddar or Monterey Jack)

1/4 cup fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the oven to 375°F (190°C).

    In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the chopped onion and bell pepper. Sauté for about 5 minutes, until they begin to soften.

      Add the minced garlic to the skillet and cook for an additional minute until fragrant.

        Add the ground turkey to the skillet, breaking it up with a spatula. Cook until browned and no longer pink, about 6-8 minutes.

          Stir in the diced sweet potatoes, corn, black beans, cumin, smoked paprika, chili powder, salt, and pepper. Mix well to combine all the ingredients.

            Cover the skillet and reduce the heat to low. Allow it to cook for about 15 minutes, or until the sweet potatoes are tender, stirring occasionally.

              Transfer the turkey and sweet potato mixture to a greased 9x13 inch baking dish. Spread it evenly.

                Sprinkle the shredded cheese over the top of the casserole.

                  Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.

                    Remove from the oven and let it sit for a few minutes. Garnish with fresh cilantro before serving.
