Ground Turkey and Peppers

Ingredients
  

1 lb ground turkey

2 medium bell peppers (red and yellow), diced

1 medium onion, chopped

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and black pepper, to taste

2 tablespoons olive oil

Fresh cilantro, for garnish

Optional: cooked rice or quinoa, for serving

Instructions
 

Heat the Oil: In a large skillet over medium heat, add the olive oil. Once the oil shimmers, add the chopped onion and cook until translucent, about 3-4 minutes.

    Sauté Garlic & Peppers: Stir in the minced garlic and diced bell peppers. Sauté for another 3-5 minutes, until the peppers start to soften.

      Add Ground Turkey: Increase the heat to medium-high and add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, about 6-8 minutes.

        Season the Mixture: Sprinkle in the cumin, smoked paprika, chili powder, salt, and pepper. Stir well to incorporate all the spices evenly.

          Incorporate Tomatoes: Pour in the can of diced tomatoes (with their juice) and stir to combine. Reduce the heat to medium-low and let everything simmer for about 10 minutes, allowing the flavors to meld.
