1 lb ground beef (preferably lean)

1 medium sweet potato, peeled and diced

2 medium zucchinis, sliced

1 small onion, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

1 cup beef or vegetable broth

Fresh parsley, chopped (for garnish)

Optional: grated cheese for topping

Cook the Ground Beef: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef, season with salt, pepper, and smoked paprika. Cook until browned, breaking it apart with a spatula. Once cooked, remove the beef from the skillet and set it aside.

    Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and cook for about 2-3 minutes until softened. Then, add the minced garlic and cook for an additional 30 seconds until fragrant.

      Add Sweet Potatoes: Stir in the diced sweet potato and pour in the broth. Cover the skillet, reduce the heat to medium, and let simmer for about 8-10 minutes, or until the sweet potatoes are tender.

        Incorporate Zucchini: Once the sweet potatoes are cooked, add the sliced zucchini and Italian seasoning. Stir to combine and cook for another 5 minutes, covered, until the zucchini is tender.

          Combine and Serve: Return the browned ground beef to the skillet, stirring everything together until well mixed and heated through. Taste and adjust seasoning if necessary. If desired, top with grated cheese and let it melt before serving.
