1 lb ground beef (preferably lean)

1 medium zucchini, diced

1 medium sweet potato, peeled and cubed

1 small onion, chopped

1 red bell pepper, chopped

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon salt (or to taste)

1/2 teaspoon black pepper (or to taste)

Fresh parsley, chopped (for garnish)

Cook the Sweet Potato: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the cubed sweet potato and sauté for about 8-10 minutes, stirring occasionally, until they begin to soften and caramelize. Remove from the skillet and set aside.
