1 lb ground beef

4 medium potatoes, diced

1 large onion, chopped

2 cloves garlic, minced

1 cup frozen peas and carrots mix

1 cup beef broth

2 tablespoons soy sauce

1 teaspoon paprika

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Chopped fresh parsley for garnish (optional)

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent (about 3-4 minutes).

    Brown the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it apart with a spoon (about 6-7 minutes). Drain excess fat, if necessary.
