For the Marinade:

500g chicken breasts, cut into bite-sized pieces

150g plain yogurt

2 tablespoons lemon juice

1 tablespoon ginger-garlic paste

1 teaspoon ground cumin

1 teaspoon garam masala

1 teaspoon turmeric powder

1 teaspoon chili powder

Salt, to taste

For the Sauce:

2 tablespoons vegetable oil

1 medium onion, finely chopped

2 tablespoons ginger-garlic paste

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon garam masala

1 teaspoon chili powder (adjust to taste)

400g can of crushed tomatoes

150ml heavy cream

Fresh coriander, for garnish

Salt, to taste

Instructions
 

Marinate the Chicken:

    - In a large bowl, mix together the yogurt, lemon juice, ginger-garlic paste, ground cumin, garam masala, turmeric powder, chili powder, and salt.

      - Add the chicken pieces to the marinade and coat well. Cover and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

        Cook the Chicken:

          - Heat a grill pan or skillet over medium-high heat. Add a drizzle of oil and cook the marinated chicken pieces in batches until they are golden brown and cooked through (about 5-7 minutes). Remove from heat and set aside.

            Prepare the Sauce:

              - In a large saucepan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown.

                - Stir in the ginger-garlic paste and cook for another minute until fragrant.

                  - Add the ground cumin, ground coriander, garam masala, and chili powder, stirring continuously for about 30 seconds.

                    Combine Everything:

                      - Pour in the crushed tomatoes and bring to a simmer. Cook for about 10-15 minutes until the sauce thickens.

                        - Add the cooked chicken pieces to the sauce, stirring well to combine.

                          - Pour in the heavy cream, mix well, and adjust the seasoning with salt to taste. Let it simmer for an additional 5-7 minutes.

                            Serve:

                              - Garnish the Chicken Tikka Masala with fresh coriander and serve hot with basmati rice or naan bread.
