1 lb (450g) baby potatoes, halved

2 large carrots, sliced into 1-inch pieces

2 medium zucchinis, sliced into half-moons

4 cloves garlic, minced

3 tbsp olive oil

1 tsp dried thyme

1 tsp dried rosemary

1 tsp paprika

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper or lightly grease it.

    In a large mixing bowl, combine the halved baby potatoes, sliced carrots, and zucchini.

      Add the minced garlic, olive oil, dried thyme, dried rosemary, paprika, salt, and pepper to the bowl. Toss everything together until the vegetables are evenly coated with the oil and herbs.

        Spread the vegetable mixture in a single layer on the prepared baking sheet. Ensure there is some space between the pieces for even roasting.
