Garlic Butter Steak Bites and Potatoes

For the Steak Bites:

1 lb sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper to taste

For the Potatoes:

1 lb baby potatoes, halved

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon salt

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven:

    Preheat your oven to 425°F (220°C) for roasting the potatoes.

      Prepare the Potatoes:

        In a large bowl, combine the halved baby potatoes, olive oil, garlic powder, paprika, and salt. Toss until evenly coated. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.

          Roast the Potatoes:

            Roast the potatoes in the preheated oven for about 20-25 minutes, or until they are golden brown and crispy on the outside, flipping them halfway through for even cooking.

              Cook the Steak Bites:

                While the potatoes are roasting, heat a large skillet over medium-high heat. Add 2 tablespoons of butter. Once melted and bubbling, add the steak bites in a single layer, making sure not to overcrowd the pan.

                  Sear the Steak:

                    Sear the steak bites for about 3-4 minutes until browned, then flip and cook for an additional 2-3 minutes for medium-rare, or until desired doneness. Remove the steak bites and set them aside on a plate.

                      Make Garlic Butter Sauce:

                        Reduce the heat to low in the same skillet, add the remaining 2 tablespoons of butter, minced garlic, rosemary, and thyme. Stir continuously for about 1-2 minutes until the garlic is fragrant and lightly golden.

                          Combine and Serve:

                            Return the steak bites to the skillet and toss them in the garlic butter sauce for about a minute. Remove from heat and season with salt and pepper to taste.

                              Serve:

                                Serve the garlic butter steak bites alongside the crispy potatoes, garnishing with freshly chopped parsley for a burst of color. Enjoy!
