2 ribeye steaks (about 1-inch thick)

1 lb baby potatoes, halved

4 tablespoons unsalted butter, divided

6 cloves garlic, minced

2 sprigs fresh rosemary (or 1 teaspoon dried rosemary)

1 tablespoon olive oil

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Prep the Potatoes: In a medium pot, bring salted water to a boil. Add the halved baby potatoes and cook until tender, about 15-20 minutes. Drain and let them cool slightly.

    Sear the Steaks: Pat the ribeye steaks dry with paper towels and season generously with salt and pepper on both sides.

      Heat the Pan: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, place the steaks in the pan. Sear for about 4-5 minutes on each side for medium-rare (adjust time for your desired doneness).

        Add Flavor: Reduce heat to medium, push steaks to one side of the pan, and add 2 tablespoons of butter, minced garlic, and rosemary. Baste the steaks with the melted garlic butter for additional flavor as they cook. Cook for another minute.

          Cook the Potatoes: In a separate pan, melt the remaining 2 tablespoons of butter over medium heat. Add the boiled potatoes and season with salt and pepper. Toss them gently to coat in the butter and cook until they are golden and crisp, about 5-7 minutes.
