Garlic Butter Steak and Potatoes Skillet

1 lb (450g) sirloin steak, cut into bite-sized pieces

1 lb (450g) baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 tsp dried)

1 tablespoon fresh thyme, chopped (or 1 tsp dried)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the halved baby potatoes and season with salt and pepper. Cook until the potatoes are golden brown and tender, about 10-15 minutes, stirring occasionally. Remove the potatoes from the skillet and set aside.

    Sear the Steak: In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high and add the steak pieces in a single layer (you may want to do this in batches to avoid overcrowding). Season the steak with salt and pepper. Sear until browned, about 2-3 minutes on each side, then remove from the skillet and set aside.

      Make Garlic Butter: In the same skillet, lower the heat to medium, add the butter, and melt it. Once melted, stir in the minced garlic, rosemary, and thyme. Cook for about 1-2 minutes, until the garlic is fragrant and lightly golden.

        Combine: Return the potatoes to the skillet along with the seared steak. Toss everything together gently into the garlic butter mix. Cook for an additional 2-3 minutes to heat everything through and allow the flavors to meld.
