4 cups fresh corn kernels (about 6-8 ears of corn)

4 cups vegetable or chicken broth

1 medium onion, diced

2 cloves garlic, minced

2 medium potatoes, peeled and diced

1 red bell pepper, chopped

1 cup heavy cream (or coconut milk for a dairy-free option)

2 tablespoons olive oil or butter

1 teaspoon smoked paprika

Salt and black pepper to taste

Fresh chives or parsley for garnish

Instructions
 

In a large pot, heat the olive oil or butter over medium heat. Add the diced onion and sauté for 4-5 minutes, until translucent.

    Add the minced garlic to the pot and cook for an additional 1 minute, until fragrant.

      Stir in the chopped red bell pepper, diced potatoes, and smoked paprika. Cook for another 5 minutes, allowing the vegetables to soften slightly.

        Add the fresh corn kernels and broth to the pot. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.

          Using an immersion blender, puree about half of the chowder to achieve a creamy texture, or transfer half to a blender and blend until smooth; then return to the pot.

            Stir in the heavy cream (or coconut milk). Season with salt and black pepper to taste, and let simmer for an additional 5 minutes to heat through.

              Serve hot, garnished with fresh chives or parsley.
