8 oz penne pasta

2 boneless, skinless chicken breasts (sliced into strips)

Salt and pepper (to taste)

2 tbsp olive oil

3 cloves garlic (minced)

1 cup cherry tomatoes (halved)

1 cup baby spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

Fresh basil leaves (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sear the Chicken: Season the sliced chicken breasts with salt and pepper. In a large skillet over medium heat, heat 2 tablespoons of olive oil. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

      Sauté Garlic and Vegetables: In the same skillet, add a little more olive oil if needed. Add the minced garlic and sauté for about 1 minute until fragrant. Then, toss in the halved cherry tomatoes and cook for another 3-4 minutes until they begin to soften.

        Add Spinach and Cream: Reduce the heat to low, then add the baby spinach to the skillet. Stir until wilted (about 2 minutes). Pour in the heavy cream and bring to a gentle simmer. Add in the grated Parmesan cheese and Italian seasoning, stirring until the cheese is melted and the sauce is creamy.
