12 large pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 large egg, lightly beaten

2 cloves garlic, minced

1 teaspoon dried Italian herbs (basil, oregano, thyme)

1/4 teaspoon salt

1/4 teaspoon black pepper

2 cups marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta shells and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside to cool slightly.

      Prepare the Filling: In a large bowl, combine the chopped spinach, ricotta cheese, half of the mozzarella cheese, Parmesan cheese, beaten egg, minced garlic, Italian herbs, salt, and black pepper. Mix well until all ingredients are combined.

        Stuff the Shells: Carefully fill each cooked pasta shell with about 2 tablespoons of the spinach and ricotta filling. Place the stuffed shells in a baking dish.

          Add Sauce: Pour the marinara sauce evenly over the stuffed shells, ensuring they are coated well. Sprinkle the remaining mozzarella cheese on top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.

              Serve: Remove from oven and let cool for a few minutes. Garnish with fresh basil leaves if desired. Serve warm.
