Ingredients

12 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

3 cups marinara sauce

Fresh basil, for garnish

Instructions

Prepare the Pasta: Boil a large pot of salted water. Cook jumbo pasta shells according to the package instructions until al dente. Drain and set aside to cool slightly.

Prepare Filling: In a large mixing bowl, combine chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, egg, garlic powder, salt, and black pepper. Mix until well combined and creamy.

Stuff the Shells: Preheat your oven to 375°F (190°C). Take a tablespoon of the cheese and spinach mixture and carefully stuff it into each cooked pasta shell. Place the stuffed shells in a greased baking dish.

Add Sauce: Pour marinara sauce evenly over the stuffed shells, ensuring they are well covered.

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the sauce is bubbly and the cheese on top is slightly golden.

Serve: Remove from the oven and allow to cool for a couple of minutes. Garnish with fresh basil before serving. Enjoy your healthy veggie dinner!
