1 pound chicken breast, cut into 1-inch cubes

2 tablespoons soy sauce

1 tablespoon fish sauce

1 tablespoon brown sugar

1 tablespoon lime juice

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon ground turmeric

1 teaspoon chili flakes (adjust to taste)

1 tablespoon vegetable oil

8 wooden skewers (soaked in water for 30 minutes)

For the Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup coconut milk

2 tablespoons soy sauce

2 tablespoons lime juice

1 tablespoon brown sugar

2 cloves garlic, minced

1 teaspoon red chili paste (optional for heat)

Chopped peanuts and cilantro for garnish

Instructions
 

Marinate the Chicken: In a mixing bowl, combine soy sauce, fish sauce, brown sugar, lime juice, garlic, ginger, turmeric, chili flakes, and vegetable oil. Add the chicken cubes to the bowl, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes (or overnight for more flavor).

    Prepare the Peanut Sauce: In a medium saucepan, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, minced garlic, and red chili paste. Heat over low heat, stirring until smooth and combined. Taste and adjust seasoning if necessary. Remove from heat and set aside.

      Skewer the Chicken: Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken onto the soaked wooden skewers, leaving a bit of space between each piece for even cooking.
