Ingredients

8 oz linguine pasta

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1/2 cup unsalted butter

4 cloves garlic, minced

1 tablespoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped (for garnish)

1/2 cup grated Parmesan cheese (for serving)

Juice of 1 lemon

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

Sear the Chicken: In a large skillet over medium-high heat, melt the butter. Once melted and bubbly, add the chicken pieces. Season with smoked paprika, cayenne pepper, oregano, salt, and black pepper. Cook until the chicken is golden brown and cooked through, about 6-8 minutes.

Add Garlic: Reduce the heat to medium-low and add the minced garlic to the skillet. Sauté for 1-2 minutes until fragrant, ensuring the garlic does not burn.

Combine Ingredients: Add the halved cherry tomatoes to the skillet and stir to combine. Cook for an additional 2-3 minutes until the tomatoes are slightly softened.

Mix with Pasta: Add the cooked linguine to the skillet with the chicken and tomatoes. Drizzle with the reserved pasta water and lemon juice, tossing everything together to create a creamy sauce. Continue to cook for another 2-3 minutes to heat through.

Serve: Divide the Cowboy Butter Chicken Linguine among serving plates. Top with chopped parsley and a generous sprinkle of grated Parmesan cheese.

Enjoy: Serve hot, and enjoy this rich and flavorful dish with your favorite side salad or garlic bread!
