Easy Chipotle Ranch Grilled Chicken Burrito

Ingredients
  

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 tablespoon chipotle seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 cup ranch dressing

1 tablespoon fresh lime juice

1 cup cooked white or brown rice

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup shredded cheddar cheese

1 cup fresh cilantro, chopped

4 large flour tortillas

Salt and pepper to taste

Optional toppings: diced avocado, salsa, and jalapeños

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, chipotle seasoning, garlic powder, onion powder, salt, and pepper. Add the chicken breasts and coat them well. Let them marinate for at least 30 minutes in the refrigerator for flavor infusion.

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Once hot, place the marinated chicken breasts on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for a few minutes before slicing.

      Make the Chipotle Ranch Sauce: In a small bowl, mix together the ranch dressing and lime juice. Adjust seasoning with salt and more chipotle seasoning if desired.

        Assemble the Burritos: On a large flour tortilla, layer cooked rice, black beans, corn, sliced grilled chicken, shredded cheese, and chopped cilantro. Drizzle a generous amount of the chipotle ranch sauce over the filling.

          Wrap the Burritos: Fold in the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top, ensuring all the filling stays enclosed.

            Grill the Burritos (optional): Place the assembled burritos seam-side down on the grill for about 2-3 minutes per side until they are golden brown and heated through.
