2 medium cucumbers, thinly sliced

1/2 red onion, thinly sliced

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon ginger, grated

1 teaspoon garlic, minced

1/4 teaspoon red pepper flakes (adjust to taste)

1/4 cup fresh cilantro or mint, chopped

1 tablespoon sesame seeds

Instructions
 

Start by preparing the cucumbers. Thinly slice them using a sharp knife or mandoline slicer. If the cucumbers have a lot of seeds, you may want to remove the seeds for a crisper salad.

    In a large bowl, combine the sliced cucumbers and red onion.

      In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey (or maple syrup), grated ginger, minced garlic, and red pepper flakes until well combined.
