Dump-and-Bake Chicken Tzatziki with Rice

1.5 lbs (680g) boneless, skinless chicken thighs

1 cup long-grain white rice

2 cups chicken broth (low sodium)

1 cup Greek yogurt

1 cucumber, grated and excess liquid squeezed out

2 cloves garlic, minced

2 tablespoons lemon juice

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon olive oil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley for garnish (optional)

Lemon wedges for serving

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: In a large mixing bowl, combine the chicken thighs with olive oil, dried oregano, salt, and pepper. Toss to coat evenly.

      Assemble the Dish: In a 9x13 inch baking dish, spread the uncooked rice evenly across the bottom. Pour the chicken broth over the rice. Arrange the seasoned chicken thighs on top of the rice.

        Bake the Chicken and Rice: Cover the baking dish tightly with aluminum foil. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the rice is tender.

          Make the Tzatziki Sauce: While the chicken and rice are baking, prepare the tzatziki sauce. In a medium bowl, mix the Greek yogurt, grated cucumber, minced garlic, lemon juice, fresh dill, salt, and pepper. Stir until well combined.

            Serve: Once the chicken and rice are done baking, remove the foil and let it sit for 5 minutes. Fluff the rice with a fork. Serve the chicken on a bed of rice topped with a generous dollop of tzatziki sauce. Garnish with fresh parsley and serve with lemon wedges on the side.
