Ingredients

500g beef flank or sirloin, thinly sliced against the grain

2 tablespoons cornstarch

1 tablespoon all-purpose flour

1/2 teaspoon baking soda

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon vegetable oil (for cooking)

4 tablespoons sweet chilli sauce

2 red bell peppers, julienned

1 small onion, thinly sliced

2 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon sesame oil

1 spring onion, chopped (for garnish)

Sesame seeds (for garnish)

Salt and pepper, to taste

Instructions

Marinate the Beef: In a bowl, combine the sliced beef with soy sauce, rice vinegar, and a pinch of salt and pepper. Let it marinate for about 15-20 minutes.

Coating Mixture: In a separate bowl, mix together cornstarch, all-purpose flour, and baking soda. This mixture will help create a crispy texture.

Coat the Beef: Drain the excess marinade from the beef and toss it in the coating mixture until all pieces are evenly coated. Make sure to shake off any excess flour.

Fry the Beef: Heat vegetable oil in a large pan over medium-high heat. Once hot, add the coated beef in a single layer (you may need to do this in batches). Fry until golden and crispy, about 2-3 minutes per side. Remove from the pan and drain on paper towels.

Stir-Fry Vegetables: In the same pan, add sesame oil. Add the minced garlic and grated ginger, sautéing briefly until fragrant. Then, add the sliced onion and bell peppers, stir-frying until they are tender but still crunchy.

Combine and Sauce: Lower the heat and add the fried beef back into the pan. Pour in the sweet chilli sauce and toss until everything is equally coated and heated through.

Serve and Garnish: Transfer the dish to a serving plate, and garnish with chopped spring onion and sesame seeds for extra flair.

Enjoy your Crispy Chilli Beef with Sweet Chilli alongside steamed rice or noodles!
