Ingredients
  

1 lb fresh salmon fillet, skin removed and cut into bite-sized cubes

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1 tsp garlic powder

1 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

Oil for frying (canola or vegetable oil works well)

For the Bang Bang sauce:

1/4 cup mayonnaise

3 tbsp sweet chili sauce

1 tbsp sriracha (adjust to taste for spiciness)

1 tsp lime juice

1/2 tsp honey (optional for extra sweetness)

Chopped green onions and sesame seeds for garnish

Prepare the Salmon: Start by cutting your salmon fillet into bite-sized cubes. Pat them dry with a paper towel to ensure the batter adheres better.

    Set Up Breading Stations: In one bowl, mix together the flour, garlic powder, paprika, salt, and pepper. In a second bowl, beat the eggs. In a third bowl, place the panko breadcrumbs.

      Bread the Salmon: Dredge each salmon cube in the seasoned flour, shaking off any excess. Then dip it into the beaten eggs and finally coat it with panko breadcrumbs, pressing gently to ensure the breadcrumbs stick.

        Heat the Oil: In a large skillet or frying pan, heat enough oil (about 1/2 inch deep) over medium-high heat. You can check if the oil is hot enough by dropping in a few panko breadcrumbs; they should sizzle immediately.

          Fry the Salmon Bites: Carefully place the breaded salmon cubes in the hot oil, cooking them in batches if necessary to avoid overcrowding. Fry for about 2-3 minutes on each side, or until golden brown and crispy. Use a slotted spoon to remove them and place them on a plate lined with paper towels to drain excess oil.
