Ingredients

1 lb boneless, skinless chicken thighs (cut into bite-sized pieces)

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup all-purpose flour

½ cup cornstarch

1 teaspoon baking powder

½ teaspoon cayenne pepper (adjust to taste)

Vegetable oil (for frying)

For the Bang Bang Sauce:

½ cup mayonnaise

¼ cup sweet chili sauce

1 tablespoon sriracha (adjust for spice level)

1 tablespoon lime juice

Salt to taste

Garnish: green onions (chopped) and sesame seeds

Instructions

Marinate the Chicken: In a bowl, combine buttermilk, garlic powder, onion powder, paprika, salt, and black pepper. Add the chicken pieces and ensure they are well-coated. Cover and marinate in the refrigerator for at least 30 minutes.

Prepare the Coating: In a separate bowl, mix together the flour, cornstarch, baking powder, and cayenne pepper. This will give the chicken its crispy texture.

Heat the Oil: In a deep skillet or frying pan, heat about 2 inches of vegetable oil over medium-high heat. You'll know the oil is ready when it shimmers and a small drop of batter sizzles upon contact.

Coat the Chicken: Remove the marinated chicken from the refrigerator. Dredge each piece in the flour-cornstarch mixture, ensuring they are fully coated. Shake off any excess flour.

Fry the Chicken: Carefully place the coated chicken pieces in the hot oil, frying in batches to avoid overcrowding. Fry for about 5-7 minutes or until golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

Make the Bang Bang Sauce: In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, and salt until well combined. Adjust seasoning and spice level if desired.

Toss the Chicken: In a large mixing bowl, add the fried chicken pieces and pour half of the Bang Bang sauce over them. Toss gently to coat.

Serve: Arrange the crispy chicken on a serving platter. Drizzle with more Bang Bang sauce and garnish with chopped green onions and sesame seeds. Serve immediately with extra sauce on the side.
