1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

2 carrots, diced

2 stalks celery, diced

1 teaspoon dried thyme

1 teaspoon dried oregano

4 cups vegetable broth

1 can (14 oz) diced tomatoes, drained

1 cup heavy cream

1 package (9 oz) fresh cheese ravioli

2 cups fresh spinach

Salt and pepper, to taste

Grated Parmesan cheese, for garnish

Fresh basil leaves, for garnish

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion, and sauté for about 3-4 minutes, until translucent. Then add the minced garlic and cook for an additional minute until fragrant.

    Add Vegetables and Seasoning: Stir in the diced carrots and celery. Cook for another 5 minutes until they are slightly softened. Sprinkle in the dried thyme and oregano, stirring to combine.
