Creamy Garlic Shrimp Pasta

12 oz fettuccine or spaghetti

1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning

1 teaspoon red pepper flakes (optional, for a bit of heat)

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Zest of 1 lemon

Juice of half a lemon

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine (or spaghetti) and cook according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest. Set aside.

    Sauté the Shrimp: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Create the Sauce: In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it. Pour in the heavy cream and stir to combine.

        Add Cheese and Flavor: Reduce the heat to low and gradually whisk in the Parmesan cheese until melted and smooth. Add the Italian seasoning, red pepper flakes, lemon zest, and lemon juice. Stir well and season with more salt and pepper to taste.

          Combine Everything: Add the cooked pasta to the sauce, tossing to combine. If the sauce is too thick, gradually add reserved pasta water until the desired consistency is reached. Then, gently fold in the cooked shrimp.
