1 lb (450g) chicken sausage, sliced (your choice of spice level)

1 cup orzo pasta

4 cups chicken broth

1 cup heavy cream

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

1 cup spinach (fresh or frozen)

1 teaspoon Italian seasoning

1 tablespoon olive oil

Salt and pepper to taste

Grated Parmesan cheese, for serving

Fresh parsley, chopped (for garnish)

Sauté the Chicken Sausage: In a large skillet, heat olive oil over medium heat. Add sliced chicken sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.

    Cook the Aromatics: In the same skillet, add diced onion and bell pepper. Sauté for about 4-5 minutes, until softened. Add minced garlic and cook for an additional minute until fragrant.

      Add Orzo and Broth: Stir in the orzo pasta and continue to cook for 1-2 minutes. Pour in the chicken broth and Italian seasoning, bringing the mixture to a gentle boil.

        Simmer: Reduce the heat to low, cover, and let the orzo simmer for about 10-12 minutes or until al dente, stirring occasionally. If the orzo absorbs too much liquid, add a bit more broth.

          Mix in the Cream and Spinach: Once the orzo is cooked, reduce the heat and stir in the heavy cream and spinach. Allow the spinach to wilt, approximately 2-3 minutes. Return the browned chicken sausage to the skillet and stir well to combine.
