Ingredients

8 ounces fettuccine or penne pasta

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Season the Chicken: In a bowl, add the chicken pieces and toss them with Cajun seasoning until evenly coated.

Sauté the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken pieces and cook until browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

Sauté the Vegetables: In the same skillet, add the onion and bell pepper. Sauté for about 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.

Make the Sauce: Pour in the chicken broth and bring it to a simmer. Stir in the heavy cream and let the mixture cook for about 2-3 minutes until it thickens slightly.

Combine Everything: Return the cooked chicken to the skillet, followed by the drained pasta. Stir in the grated Parmesan cheese until melted and well combined. Season with salt and pepper to taste.

Serve: Remove the skillet from heat. Garnish with fresh parsley and additional Parmesan if desired. Serve hot and enjoy your creamy Cajun chicken pasta!
