12 oz fettuccine or pasta of choice

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

3 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Optional: red pepper flakes (for extra heat)

Instructions
 

Cook the Pasta: Begin by boiling a large pot of salted water. Once boiling, add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving a small cup of pasta water.

    Prepare the Chicken: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the chicken pieces and season with smoked paprika, cayenne pepper, oregano, salt, and black pepper. Sauté until the chicken is golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

      Make the Cowboy Butter Sauce: In the same skillet, add the remaining tablespoon of butter and the minced garlic. Sauté for about 1 minute until fragrant. Pour in the chicken broth, scraping any browned bits off the bottom of the pan.

        Add Cream and Cheese: Reduce the heat to low and stir in the heavy cream, mixing well. Gradually add the grated Parmesan cheese, stirring continuously until melted and smooth. If the sauce is too thick, add a bit of the reserved pasta water until desired consistency is reached.

          Combine Pasta and Chicken: Return the cooked chicken to the skillet and toss to coat in the creamy sauce. Add the cooked pasta, mixing gently until everything is well combined. Adjust seasoning with salt and pepper to taste.

            Serve: Remove from heat and garnish with freshly chopped parsley and, if desired, a sprinkle of red pepper flakes for extra heat. Serve immediately while hot.
