4 cups of day-old bread (French or brioche), cut into 1-inch cubes

4 large eggs

1 cup milk (or any non-dairy milk)

1/4 cup sugar

1 teaspoon vanilla extract

1 tablespoon ground cinnamon

1/2 teaspoon salt

1/4 cup unsalted butter, melted

1/2 cup packed brown sugar

1 tablespoon ground cinnamon (for topping)

1/4 cup sugar (for topping)

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with non-stick spray or butter.

    Prepare the Bread: In a large mixing bowl, combine the bread cubes with the melted butter. Toss well to coat the bread evenly.

      Make the Egg Mixture: In a separate large bowl, whisk together the eggs, milk, sugar, vanilla extract, 1 tablespoon of ground cinnamon, and salt until fully combined.

        Combine Bread and Egg Mixture: Pour the egg mixture over the buttered bread cubes and gently mix until the bread is thoroughly soaked. Let it sit for about 10 minutes to absorb the flavors.

          Fill the Muffin Tin: Divide the soaked bread mixture evenly among the muffin cups, filling each about 3/4 full.
