CILANTRO LIME CHICKEN THIGHS

4 bone-in, skin-on chicken thighs

1/4 cup fresh lime juice (about 2 limes)

1/4 cup olive oil

1/4 cup fresh cilantro, chopped

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

Lime wedges and extra cilantro for garnish

Instructions
 

Make the Marinade: In a bowl, whisk together lime juice, olive oil, chopped cilantro, minced garlic, cumin, smoked paprika, salt, black pepper, and red pepper flakes (if using).

    Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

      Preheat the Oven: When you’re ready to cook, preheat your oven to 425°F (220°C).

        Prepare the Chicken Thighs: Remove the chicken from the marinade and shake off excess (discard the leftover marinade). Let the chicken sit at room temperature for about 15-20 minutes.
