Chopped Chicken Bacon Ranch Sub

Made from tender chicken breast, crispy bacon, and creamy ranch dressing, it's topped with gooey cheddar cheese and fresh green onions. Ingredients
  

1 lb boneless, skinless chicken breast

4 strips of bacon, chopped

1/2 cup ranch dressing

1 cup shredded cheddar cheese

1/4 cup green onions, sliced (plus extra for garnish)

1 tbsp olive oil

Salt and pepper, to taste

4 hoagie rolls

Lettuce leaves (optional)

Sliced tomatoes (optional)

Instructions
 

Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Once cooked, remove it from the pan and drain on paper towels. Reserve about 1 tablespoon of the bacon grease in the pan.

    Cook the Chicken: Season the chicken breasts with salt and pepper. In the same skillet with the reserved bacon grease, heat the olive oil. Add the chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/75°C). Once done, remove the chicken from the pan and let it rest for a few minutes.

      Chop the Chicken: After resting, chop the chicken into bite-sized pieces. In a large bowl, combine the chopped chicken, bacon, ranch dressing, cheddar cheese, and green onions. Mix well until all the ingredients are evenly coated with the ranch dressing.

        Prepare the Hoagie Rolls: Slice each hoagie roll lengthwise, but not all the way through, creating a pocket for the filling.

          Assemble the Sub: Optional - line the inside of each hoagie roll with lettuce leaves and a few slices of tomato. Spoon the chicken, bacon, and ranch filling generously into each hoagie roll.
