Ingredients

1 pound boneless, skinless chicken thighs, cut into 1-inch pieces

1/4 cup honey

2 tablespoons chipotle sauce (adjust based on desired spice level)

2 tablespoons olive oil

1 tablespoon soy sauce

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon cumin

Salt and pepper to taste

Skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions

Marinate the Chicken: In a mixing bowl, combine honey, chipotle sauce, olive oil, soy sauce, minced garlic, smoked paprika, cumin, salt, and pepper. Whisk until well incorporated. Add the chicken pieces and toss until they are fully coated. Cover and marinate in the refrigerator for at least 1 hour or up to overnight for deeper flavor.

Prepare the Skewers: If you’re using wooden skewers, soak them in water for at least 30 minutes prior to grilling to prevent burning. If using metal skewers, you can proceed directly to skewering.

Skewer the Chicken: Preheat your grill to medium-high heat. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

Grill the Skewers: Once the grill is hot, place the skewers on the grill. Cook for about 12-15 minutes, turning occasionally, until the chicken is charred and cooked through (internal temperature should reach 165°F).

Serve: Remove the skewers from the grill and let them rest for a few minutes. Serve warm with a drizzle of extra chipotle honey sauce if desired, and garnish with fresh cilantro or lime wedges for a pop of freshness.
