2 cups cooked jasmine rice (preferably day-old)

1 cup diced cooked chicken (rotisserie chicken works great)

1/2 cup frozen peas and carrots mix

2 eggs, beaten

3 tablespoons soy sauce (adjust to taste)

1 tablespoon oyster sauce (optional)

2 green onions, chopped

2 cloves garlic, minced

1 teaspoon ginger, grated

Salt and pepper to taste

2 tablespoons vegetable oil

Sesame oil for drizzling (optional)

Prep the Rice: If using freshly cooked rice, spread it out on a baking sheet to cool and dry out slightly. Day-old rice is ideal as it’s less sticky.

    Cook the Eggs: Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the beaten eggs and scramble until fully cooked. Remove from the pan and set aside.

      Sauté the Aromatics: In the same wok, add another tablespoon of oil. Once hot, add the minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant but not browned.

        Add Chicken and Vegetables: Toss in the diced chicken and the frozen peas and carrots. Stir-fry for 2-3 minutes until heated through.

          Combine Rice: Increase the heat to high and add the cooked rice. Break up any clumps with a spatula and mix well with the chicken and vegetables.

            Season: Pour in the soy sauce and oyster sauce (if using), stirring thoroughly to coat all the rice evenly. Adjust seasoning with salt and pepper to taste.

              Finish Up: Add the scrambled eggs back into the wok along with the chopped green onions. Gently toss everything together, ensuring even distribution of flavors.

                Garnish: Drizzle a bit of sesame oil on top for extra flavor before serving.
