Ingredients

1 lb flank steak, sliced thinly against the grain

2 cups fresh broccoli florets

1 red bell pepper, sliced

4 garlic cloves, minced

2 inches fresh ginger, grated

1 tablespoon vegetable oil

3 tablespoons soy sauce (low sodium recommended)

1 tablespoon oyster sauce

1 tablespoon cornstarch

1 tablespoon water

1 teaspoon sesame oil

Salt and pepper to taste

Cooked jasmine rice, for serving (optional)

Instructions

Marinate the Beef: In a medium bowl, combine the sliced flank steak with 1 tablespoon of soy sauce, 1 teaspoon of cornstarch, and a pinch of salt. Set aside for at least 15 minutes while you prepare the other ingredients.

Blanch the Broccoli: Bring a pot of water to a boil. Add the broccoli florets and blanch for about 2-3 minutes until they turn bright green and slightly tender. Remove and immediately plunge into ice water to stop the cooking process. Drain and set aside.

Prepare the Sauce: In a small bowl, mix together the remaining soy sauce, oyster sauce, sesame oil, 1 tablespoon of water, and the remaining cornstarch. Stir until smooth and set aside.

Stir-Fry the Beef: Heat the vegetable oil in a large wok or skillet over high heat. Once the oil is hot, add the marinated beef in a single layer. Do not overcrowd the pan; you may need to do this in batches. Cook for about 2-3 minutes until browned, then transfer to a plate.

Cook the Vegetables: In the same wok, add the minced garlic, grated ginger, and sliced red bell pepper. Stir-fry for about 1-2 minutes until fragrant. Add the blanched broccoli and stir-fry for another 1 minute.

Combine and Serve: Return the beef to the wok, pour in the sauce, and stir everything together. Cook for an additional 2-3 minutes until everything is heated through and coated with the sauce. Taste and adjust seasoning if necessary.

Presentation: Serve the beef and broccoli stir-fry over fluffy jasmine rice if desired, garnished with sesame seeds or sliced green onions.
