2 cups elbow macaroni

1 lb ground beef (or turkey for a lighter option)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 cup beef broth

1 cup shredded cheddar cheese (plus extra for topping)

1 tablespoon chili powder

1 teaspoon ground cumin

½ teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper, to taste

1 tablespoon olive oil

Fresh cilantro, for garnish (optional)

Sour cream, for serving (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Brown the Meat: In a large skillet over medium heat, add olive oil. Once hot, add ground beef, breaking it apart with a spatula. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary.

      Add Seasonings: To the skillet, add chili powder, ground cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Stir well to coat the meat in spices.

        Combine Ingredients: Pour in the diced tomatoes with green chilies, kidney beans, black beans, and beef broth. Stir everything together to combine and bring to a simmer. Let it cook for 5 minutes.

          Mix in Pasta: Add the cooked elbow macaroni to the skillet, stirring to combine. Allow the mixture to simmer for an additional 2-3 minutes to heat through.
