Ingredients

1 lb chicken sausage, sliced into 1-inch rings

1 red bell pepper, cut into 1-inch squares

1 yellow bell pepper, cut into 1-inch squares

1 zucchini, sliced into thick rounds

1 red onion, cut into wedges

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions

Preheat the grill: Start by preheating your grill or grill pan over medium-high heat.

Prepare the marinade: In a mixing bowl, combine olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Mix well to create a marinade.

Toss the ingredients: Add the sliced chicken sausage, bell peppers, zucchini, and red onion into the bowl with the marinade. Toss everything together until all the ingredients are well coated.

Assemble the skewers: Thread the marinated chicken sausage and veggies alternately onto the skewers. Leave a little space between each piece to ensure even cooking.

Grill the skewers: Place the skewers on the preheated grill. Cook for 8-10 minutes, turning occasionally, until the chicken sausage is browned and the vegetables are tender.

Serve: Once cooked, remove the skewers from the grill and let them rest for a couple of minutes. Garnish with freshly chopped parsley before serving.
