Chicken Ramen Stir Fry (30 minutes)

2 packs of instant ramen noodles (discard the seasoning packets)

1 lb (450g) boneless, skinless chicken breast, thinly sliced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

2 tablespoons vegetable oil

3 cloves garlic, minced

1 inch ginger, minced

1 cup broccoli florets

1 bell pepper, sliced (any color)

1 cup snap peas

2 green onions, chopped

1 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Sesame seeds, for garnish

Instructions
 

Cook the Ramen: In a pot of boiling water, cook the ramen noodles according to package instructions for about 3-4 minutes. Drain and set aside.

    Prepare the Chicken: In a medium bowl, mix sliced chicken with soy sauce, oyster sauce, and a pinch of black pepper. Let it marinate for about 5 minutes.

      Stir Fry the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until it’s browned and cooked through (about 5-7 minutes). Remove chicken from the skillet and set aside.

        Sauté the Aromatics: In the same skillet, add remaining vegetable oil. Add minced garlic and ginger, sauté for about 30 seconds until fragrant.

          Add the Veggies: Toss in broccoli, bell pepper, and snap peas. Stir fry for about 3-4 minutes or until veggies are tender-crisp.

            Combine Everything: Return the cooked chicken to the skillet with the vegetables. Add in the cooked ramen noodles along with sesame oil, and red pepper flakes (if using). Toss everything together, ensuring the noodles are well coated with the sauce.

              Finish It Off: Cook for an additional 2-3 minutes until everything is heated through. Taste and adjust seasoning with salt and pepper.

                Garnish and Serve: Remove from heat, top with chopped green onions and sesame seeds. Serve hot!
