2 medium sweet potatoes, peeled and diced

1 tablespoon olive oil

Salt and pepper, to taste

2 boneless, skinless chicken breasts (about 1 pound total)

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon dried thyme

½ teaspoon cayenne pepper (optional for heat)

1 cup kale or spinach, roughly chopped

1 tablespoon balsamic vinegar

½ avocado, sliced (for topping)

2 tablespoons feta cheese, crumbled (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare Sweet Potatoes: In a mixing bowl, toss the diced sweet potatoes with olive oil, salt, and pepper. Spread them evenly on one side of a baking sheet.

      Season Chicken: In the same bowl, mix the chicken breasts with smoked paprika, garlic powder, thyme, cayenne pepper (if using), salt, and pepper to taste. Place the chicken on the other side of the baking sheet.

        Roast: Roast sweet potatoes and chicken in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C) and the sweet potatoes are tender and caramelized.

          Sauté Greens: While the chicken and sweet potatoes are roasting, heat a small skillet over medium heat. Add the chopped kale or spinach and a splash of water (or a little olive oil). Sauté for 3-5 minutes until just wilted. Drizzle with balsamic vinegar and mix well.
