Cheesy Beef Enchilada Tortellini

1 package (9 oz) cheese tortellini

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 can (10 oz) enchilada sauce (red or green)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh or frozen)

1 cup shredded cheddar cheese

1 cup sour cream

1 tsp chili powder

1 tsp cumin

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Optional: sliced jalapeños and avocado for serving

Instructions
 

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook until fully browned, breaking it up with a spoon as it cooks, about 5-7 minutes. Drain excess fat if necessary.

      Sauté Vegetables: Add the diced onion and minced garlic to the skillet with the beef. Sauté for another 3-4 minutes until the onion is translucent.

        Combine and Flavor: Stir in the enchilada sauce, black beans, corn, chili powder, cumin, and season with salt and pepper. Let it simmer for about 5 minutes to blend the flavors.

          Mix in Tortellini: Gently fold the cooked tortellini into the beef mixture until well combined.

            Prepare for Baking: Preheat your oven to 350°F (175°C). In a large baking dish, spread half of the beef and tortellini mixture evenly. Add half of the sour cream on top and sprinkle with half of the shredded cheddar cheese.

              Layering: Repeat the process with the remaining tortellini mixture, sour cream, and top with the remaining cheese.

                Bake: Cover with aluminum foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                  Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro. Serve warm with optional sliced jalapeños and avocado on the side.
