Ingredients

For the Cheesy Beef Burritos:

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon chili powder

1 cup salsa (mild or spicy, according to your preference)

1 cup shredded cheddar cheese

1 cup refried beans

4 large flour tortillas

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

For the Crispy Fries:

4 large russet potatoes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Instructions

Prepare the Fries:

    - Preheat your oven to 425°F (220°C).

      - Wash and peel the russet potatoes. Cut them into thin strips to make fries.

        - In a large bowl, toss the potato strips with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.

          - Spread the fries out on a baking sheet in a single layer. Bake for 30-35 minutes, flipping halfway through, until golden and crispy.

            Cook the Beef Filling:

              - In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onions and sauté until translucent, about 3-4 minutes.

                - Add the minced garlic and ground beef to the skillet. Cook, breaking the beef apart with a spatula, until browned and cooked through. Drain excess fat if necessary.

                  - Stir in cumin, chili powder, salt, pepper, and salsa. Mix well and simmer for about 5 minutes.

                    - Remove from heat and fold in the refried beans and half of the shredded cheddar cheese.

                      Assemble the Burritos:

                        - Lay out the flour tortillas on a clean flat surface. Spoon an even portion of the beef mixture onto the center of each tortilla.

                          - Sprinkle the remaining cheddar cheese on top of the beef filling.

                            - Fold the sides of the tortilla over the filling and roll it up tightly from the bottom to secure the filling inside.

                              - If desired, you can grill the burritos in a skillet with a little oil until golden brown on both sides or simply place them in a warm oven to heat through.

                                Serve:

                                  - Once the fries are done and crispy, remove them from the oven and sprinkle with additional salt if needed.

                                    - Cut the burritos in half and serve them alongside the crispy fries. Garnish with fresh cilantro.
