1 lb (450g) breakfast potatoes, diced

6 slices of bacon, chopped

1 cup (100g) shredded cheddar cheese

1 cup (240ml) milk

4 large eggs

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp black pepper

1/2 tsp salt

1/4 cup (60ml) green onions, sliced (for garnish)

Optional: 1/2 cup (120g) diced bell peppers for added flavor

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or butter.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove the bacon and let it drain on paper towels, leaving about 1 tablespoon of bacon fat in the skillet.

      Sauté the Potatoes: In the same skillet, add the diced breakfast potatoes. Sauté them in the residual bacon fat until they are golden and tender, about 10-12 minutes. If using bell peppers, add them in the last 5 minutes of cooking.

        Mix the Egg Mixture: In a large bowl, whisk together the milk, eggs, garlic powder, onion powder, black pepper, and salt until well combined.

          Assemble the Casserole: In the greased baking dish, layer the sautéed potatoes evenly. Sprinkle the crispy bacon and half of the cheddar cheese over the potatoes. Pour the egg mixture evenly over the top. Finally, sprinkle the remaining cheese on top.

            Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the eggs are set and the top is golden and bubbly.

              Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with sliced green onions before serving.
