1 cup rolled oats

2 cups milk (or plant-based milk)

1 medium carrot, grated

1/4 cup crushed pineapple, drained

1/4 cup walnuts, chopped

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1 tablespoon maple syrup (or honey)

1 teaspoon vanilla extract

Pinch of salt

Cream cheese (optional, for topping)

Raisins or cranberries (optional, for added sweetness)

Instructions
 

In a medium saucepan, combine the rolled oats, milk, grated carrot, and a pinch of salt. Bring to a boil over medium heat, stirring occasionally.

    Once boiling, reduce the heat to low and let it simmer for 5-7 minutes or until the oats are cooked and have absorbed most of the liquid. Stir consistently to prevent sticking.

      Add the crushed pineapple, walnuts, cinnamon, nutmeg, maple syrup, and vanilla extract to the oatmeal. Stir well to combine all the ingredients.

        Cook for an additional 2-3 minutes until everything is heated through. Adjust the sweetness to taste by adding more maple syrup if desired.

          Remove from heat and let it sit for a minute to thicken.

            Serve warm in bowls. Top with a dollop of cream cheese (if using), and sprinkle with extra walnuts and raisins or cranberries for added texture and sweetness.
