Bruschetta Chicken Pasta

12 oz penne pasta

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, quartered

1/2 cup fresh basil leaves, chopped

1 teaspoon balsamic vinegar

1/2 cup grated Parmesan cheese

1/4 teaspoon red pepper flakes (optional)

Additional basil leaves for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: While the pasta is cooking, season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Add the chicken and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from skillet and let it rest for a few minutes before slicing.

      Make the Bruschetta Topping: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the quartered cherry tomatoes and cook for about 3-4 minutes until they soften. Stir in the chopped basil and balsamic vinegar, and cook for another minute. Remove from heat.

        Combine Ingredients: In a large mixing bowl, combine the cooked penne pasta, sliced chicken, and bruschetta topping. Toss gently to blend all the flavors. If desired, add red pepper flakes for some heat.

          Serve: Divide the pasta among serving plates and sprinkle with grated Parmesan cheese. Garnish with additional fresh basil leaves.
