Ingredients
  

2 cups fresh broccoli florets

1 medium onion, chopped

2 cloves garlic, minced

4 tablespoons unsalted butter

1/4 cup all-purpose flour

4 cups vegetable broth

1 cup whole milk or heavy cream

2 cups sharp cheddar cheese, grated

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1/4 teaspoon nutmeg (optional)

Croutons or fresh herbs for garnishing (optional)

Instructions
 

In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add the minced garlic and cook for an additional minute until fragrant.

      Stir in the flour, mixing until well combined, and cook for about 2 minutes to form a roux.

        Gradually whisk in the vegetable broth, making sure there are no lumps. Bring to a simmer.

          Once the broth is simmering, add the broccoli florets and cook for about 10-12 minutes, or until the broccoli is tender.

            Use an immersion blender to puree the soup to your desired consistency (smooth or chunky).

              Stir in the milk or cream and heat through, but do not let it boil.

                Gradually add the grated cheddar cheese, stirring until melted and smooth.

                  Season the soup with salt, black pepper, and nutmeg (if using).
