1 lb boneless chicken thighs, cut into bite-sized pieces

2 tablespoons black pepper, freshly cracked

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

4 cloves garlic, minced

1 inch ginger, grated

1 bell pepper, sliced (red or green)

1 small onion, sliced

2 green onions, chopped (for garnish)

Salt, to taste

Optional: Cooked jasmine rice, for serving

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces, black pepper, soy sauce, oyster sauce, and cornstarch. Mix well to ensure each piece is coated. Let it marinate for at least 30 minutes (or up to 2 hours) in the refrigerator for enhanced flavor.

    Heat the Wok: In a large skillet or wok, heat the vegetable oil over medium-high heat.

      Stir-Fry Aromatics: Add the minced garlic and grated ginger to the hot oil. Stir-fry for about 30 seconds until fragrant, being careful not to burn them.

        Cook the Chicken: Increase the heat to high. Add the marinated chicken to the skillet. Stir-fry for about 5-7 minutes, until the chicken is browned and cooked through.

          Add Vegetables: Toss in the sliced bell pepper and onion. Stir-fry for another 3-4 minutes until the vegetables are tender yet still crisp.
