12 oz spaghetti or fettuccine

2 medium boneless, skinless chicken breasts, cut into bite-sized pieces

4 oz pancetta or thick-cut bacon, diced

2 large eggs

1 cup grated Pecorino Romano cheese (plus extra for serving)

2 cloves garlic, minced

1 tablespoon olive oil

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

    Prepare the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the chicken pieces and season with salt and pepper. Cook until golden brown and cooked through, about 6-7 minutes. Remove the chicken from the pan and set aside.

      Cook the Pancetta: In the same skillet, add the pancetta or bacon. Cook until crispy, about 4-5 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

        Combine Ingredients: Reduce the heat to low. Add the cooked pasta to the skillet and toss with the pancetta and garlic. Return the chicken to the skillet and mix well.

          Mix the Sauce: In a bowl, whisk together the eggs and grated Pecorino Romano cheese until smooth. Slowly pour the mixture into the pasta while tossing to combine quickly. Add reserved pasta water little by little until the sauce reaches a creamy consistency.

            Season to Taste: Taste and adjust seasoning with salt and freshly cracked black pepper, if needed.
