Ingredients

For the Dumplings:

1 cup all-purpose flour

1/2 cup water

1 tsp turmeric powder

1/2 tsp salt

1/2 tsp baking powder

1 cup mixed vegetables (carrots, peas, and bell peppers), finely chopped

1 tsp curry powder

1 tbsp fresh cilantro, chopped

For the Soup:

4 cups vegetable broth

1 can (400ml) coconut milk

1 medium onion, diced

2 garlic cloves, minced

1 inch ginger, grated

2 tbsp curry powder

1 tbsp soy sauce

2 tsp lime juice

Salt and pepper to taste

Fresh cilantro and lime wedges for garnish

Instructions

Make the Dumpling Dough:

    - In a mixing bowl, combine the flour, turmeric, salt, and baking powder. Gradually add water, kneading until a smooth dough forms. Let it rest for 20 minutes.

      Prepare the Filling:

        - In a separate bowl, mix the finely chopped vegetables with curry powder and cilantro. This will be the filling for your dumplings.

          Form the Dumplings:

            - Divide the dough into small balls (about 1 inch in diameter). Roll each ball out into a thin circle. Place a teaspoon of the vegetable filling in the center of the dough circle. Fold the dough over and pinch the edges to seal. Repeat until all the dough and filling are used.

              Make the Soup:

                - In a large pot, heat a splash of oil over medium heat. Sauté the diced onion until translucent, then add the minced garlic and grated ginger, cooking until fragrant.

                  - Stir in the curry powder and let it toast for one minute, then add the vegetable broth and coconut milk. Bring to a boil.

                    Cook the Dumplings:

                      - Once the soup is boiling, reduce the heat to a simmer. Gently drop the dumplings into the soup. Let them cook for about 8-10 minutes, or until they rise to the surface and are cooked through.

                        Finish Up:

                          - Stir in the soy sauce, lime juice, and season with salt and pepper to taste. Taste the soup and adjust seasoning if necessary.

                            Serve:

                              - Ladle the soup into bowls, garnish with fresh cilantro and lime wedges. Enjoy warm!
