Ingredients

For the Dumplings:

1 cup all-purpose flour

½ teaspoon salt

1/4 cup water (adjust as needed)

1 tablespoon vegetable oil

1/2 cup finely chopped vegetables (e.g., carrots, bell peppers, and green onions)

1/4 cup finely chopped cooked chicken or tofu (optional)

1 teaspoon curry powder

A pinch of black pepper

For the Soup:

4 cups vegetable broth or chicken broth

1 can (14 oz) coconut milk

1 tablespoon curry paste (red or yellow)

1 tablespoon soy sauce

1 tablespoon fish sauce (optional)

1 tablespoon lime juice

1 tablespoon fresh cilantro, chopped (for garnish)

Sliced green onions (for garnish)

Instructions

Make the Dumpling Dough: In a bowl, combine the flour and salt. Gradually add water and oil, mixing until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Cover and let it rest for 30 minutes.

Prepare the Dumpling Filling: In a mixing bowl, combine the chopped vegetables, optional chicken or tofu, curry powder, and black pepper. Mix well to integrate the flavors.

Form the Dumplings: Divide the dough into small pieces (about the size of a golf ball). Roll out each piece into a circle, about 1/8 inch thick. Place a teaspoon of the filling in the center of each circle, fold and pinch the edges to seal tightly, creating a dumpling. Repeat until all dough and filling are used.

Prepare the Soup Base: In a large pot over medium heat, pour in the vegetable or chicken broth and coconut milk. Stir in the curry paste, soy sauce, fish sauce (if using), and lime juice. Bring the mixture to a gentle simmer.

Cook the Dumplings: Carefully add the dumplings to the simmering soup. Cook for about 8-10 minutes or until the dumplings float to the surface and are cooked through.

Serve: Ladle the soup into bowls and garnish with chopped fresh cilantro and sliced green onions. Enjoy hot!
